Irish cookbook to raise funds for hospices

SIXTY of Ireland’s top chefs and restaurateurs have joined forces to produce a cookery book for Christmas to help swell the funds of the Irish Hospice Foundation.
The book, called ‘Zest!’ is the brainchild of Meath man Tim O’Dea and includes recipes from fellow Meath man Richard Corrigan, who has restaurants in London and Dublin, as well as other celebrity chefs including Paul Rankin, Kevin Dundon, Derry Clarke and Kevin Thornton.
The Kildalkey man is hoping that 'Zest!' will become a bestseller and raise significant funds for the work of the hospice movement.
Mr O'Dea's was previously involved in bringing out the book 'Serious Fun' in 2006 when he was fundraising for the children's charity, Barretstown.
He says that 'Zest!' brings people on a gourmet tour of Ireland for a recession-proof €20 per book.
Sponsored by Avonmore and Investec, the book is a showcase of Ireland's culinary talent and contains over 180 mouth-watering recipes, featuring the best of Irish ingredients.
The funds raised from the sale of 'Zest!' will fund the crucial work of the IHF, including developing a children's hospice homecare service, funding a night-nurse service and supporting efforts to extend palliative care to all people with life-limiting diseases.
